It's a work of love on a Saturday when it's too cold to go outside. I'll do this several times over the winter so that I have frozen stock for my concoctions through the year. Some stocks I have to make because I haven't found any I could buy such as dark stocks where the bones are baked to bring out more sweetness and then usually some tomato paste is involved and of course some wine for deglazing and drinking:) Never found where I could buy those.

I like Emeril's chicken stock in a pinch. His is lower in sodium then the other brands low sodiums are.
