hey....Mine is almost the same, too.

a pinch of red pepper flakes.....and my wife likes a little pickling spice sans clove.

fry them livers in a cast iron skillet with a bit of bacon.....boil the gizzards and then fry them the same way.....

good eats.

Thanks. I grow both those herbs too, will give them a try. Although I grow many kinds of herbs, thyme is my favorite, I grow three different kinds.
