You can dress up the patties in a bunch of ways but I like my crab cakes and salmon patties simple so I can taste the fish or crab. But throwing a bit of mayo in along with some white pepper and perhaps dill can liven them up a bit IMO. Old Bay works well of course also. A bit of Creole mustard can be interesting also.

Gentle with any of them though so we can taste the meat.
