The Zarlenga article is one link about both the Continental and Greenback, his book is another as is Niall Ferguson's book about money history. Google would have others.
Par is original issue value and in the case of the Greenback, it was basically gold.

Other wealth protections besides gold and other PMs would include certain gemstones (not diamonds), jewelry, coins, stamps, special conditions in real estate or small export/import businesses - basically hard or tangible assets.
