He comes across like something is inherently wrong with wheat but has never offered any basis for that as far as I can tell.

He DOES believe that there is something inherently wrong with wheat. He came to this conclusion empirically, when he took patients off wheat to cut their blood sugar, and then noticed that it made a big difference in their lipid panel numbers, plus they felt better.
