It really is good. I always double the recipe, and chill the mandarin oranges. The celery, onions, cashews and noodles are kind of crunchy and the flavors are really yummy. If you try it, let me know what you think.

Better check the caloric content of those chow mein noodles. I think they're high in sodium too. I know I stopped buying them a long time ago just for that reason. I think I remember this correctly.
