My wife does a pretty good desert, that is not too heavy on carbs. It is very simple. I think the only ingredients are blackberrries and mascarpone cheese and maybe some sweetener. She puts it in the oven for short time. If you are interested, I will ask her for exact recipe...

I enjoy frozen blueberries with cream poured over the top which then freezes to the berries and ends up for all intents being blueberry ice cream.

Excellent! I quit buying frozen blueberries at Costco and stayed with strawberries when they went organic and jumped the blueberry price 40%. The best fruit for "no sugar" is berries of all types. I decided to lay off the cream I was using on my berries when I had this weight jump the last two weeks.

Although a lot of it was water retention caused by my stopping my Furosemide for my Cardioversion Monday. That procedure ended up jumping my water retention by about two pounds by itself.

What I did was whip the cream with some Splenda and vanilla, then mix in frozen berries and let them match temperature in the Fridge for a few hours. Then it really is "berry ice cream!"

Add splenda and you are home free. I found a non fat half and half that one could mix with cream or heavy whipping cream and yum, yum.
