No, one finely chopped fresh jalapeno (seeded (a lot of the heats in the seeds) and deveined, de-stemmed.) will not be too hot with 5 hass avocados. But you can do 1/2 first and test it.

The juice out of a jar of jalapenos helps too.

I use a potato masher to mash the avos and leave it chunky rather than soupy.

I don't like garlic in it or tommatos but some like chopped roma tomatoes (water and seeds out).

Hass avos (guatamalan strain) are the best for guac.. Florida, (west indian strain) avos have more water and less fat...not that good on their own for guacamole although sometimes I'll blend in a Lula (cross between a guatamalan and west indian avo) with 4 hass to lighten it up.

Don't even try to make guac without cilantro.

Don't over do the onion.
