re: commercial grade kitchens laying waste everywhere.

I once designed my dream kitchen, spent 100's of thousands of dollars for a client. This client, a friend actually, had me over to show her how to bake bread maybe two or three years after we finished the project. I turned on the oven, it didn't heat at all. When the repair person came out later, it turned out that it was not plugged in. It was a built-in double oven from Gaggenau and had sat unused or tested for all that time. We had a laugh about that.

Many of those out there. People became used to making "reservations" not meals. Things change. This weekend the WSJ had an article about the food Network having its best year ever and enormous increases in viewership.
