I've been doing it all my life. It's delicious. Tastes very much like tuna sashimi. You have to get the lean stuff, though. Fatty raw hamburger would be nasty.

I've always known that there might be some health risk but I'm addicted. And as careful as I can be. When I get into concerned mode, I get a chunk of meat and mince it myself in the blender. You can wash the outer edges of a chunk of meat and the unexposed meat is safe.

I eat raw beaf as well. Look for "Steak Tartare" recipes on the web. The ingredients I put in mine:
- raw egg yolks
- chopped onion
- chopped garlic
- ketchup
- worcestershire sauce
- some mustard
- some spices, salt

Goes well with red wine - or beer.

You can find it in a lot of better restaurants in Europe, or some European restaurants in the US. You generally get all the ingredients separately on a plate and mix it yourself. In the US, best probability to find it is in French restaurants.
