I used to frequent the original Ruby Tuesdays on the strip in Knoxville, way back before it ever became a franchise. It was in an old Victorian house and was a cool hangout. It seems odd now to see them everywhere, housed in little boxes. I notice they are in the process of replacing all the iconic architectural features, such as the Tiffany lamps and the black and white checked one-inch tile floors. The salad bar still looks like the original, though. I used to try to tell the waitresses this little story, but quickly tired of their glazed eyes and subsequent fossil-avoidance maneuvers.
