Then why does my government keep asking me for more dollars in taxes so that we can pay the interest on that debt?

Beats me! Who says that they are paying interest with your tax dollars? More likely it's going to pork projects to improve their chances of re-election or benefits for family and friends.

Let's face it. For as long as the ROW keeps accepting that US dollars have value, then somebody will keep printing them.

To save their costs the FED could let you download them on the internet yourself and let you print your own like discount coupons or airline tickets. The only difference would be that then people would realise that they are only pieces of paper with little intrinsic value.
