There certainly is a lot of "don't eat industrialized meat" sentiment out there. "Avoid meat fattened on corn."

I'm sure I could "drill down" and identify your differentiation between those two notions if I worked at it but I don't think the difference matters, which would qualify the my differentiation as well as yours as nitipicking, so I'll spare you. <g>

Whether it's corn or other factors of industrialization, the point stands--we don't know whether the findings apply to the actual meat or the "contaminants" unless we feed the subjects pasteurized beef or otherwise control for the "contaminants."

It's too chewy for me!

That was my reaction, as well. I had sampled tenderloin, my standard beef cut, maybe six months ago. The day before yesterday I ordered another delivery of pasteurized meat. This time I ordered pot roast cuts thinking that maybe slow cooked or grinding for hamburger might turn out better. I have a chunk of bottom round defrosting now. I also ordered a couple of chickens to test. If this batch doesn't produce anything satisfactory, I give up.
