why do they fight like hell when we try to ban assault weapons like the AK-47?

Because real assault rifles and other automatic weapons are already heavily regulated and have been for a very long time. The "assault weapons" ban, bans weapons defined mostly by cosmetic reasons. Even if you accept the basic ideas behind gun control it would still be a silly law.
