I don't know that my foresight is better than anyone else's, but since you ask, I'll say that, yes, I'm assuming the technical benefits of OLED displays will win them a place in Apple's product line at some point. When that might be, and exactly where they'll show up first, I'm not allowed to say. ;-)

What about the OLEDs?

The one current obstacle to Apple adopting OLED's in either the iPhone or the iPod Touch is the potential volumes that a supplier would need to support. Samsung Mobile Displays is the only supplier of any real size right now and it looks like the vast majority of their capacity in the 2nd half is going into Samsung handsets. Unless a manufacturer has been putting capex into OLED's without talking about it (a small possibility), I think we'll have to wait until 2010 to see Apple adopt OLED's in either device.

If/when Apple does start to use OLED's, it should allow for significantly longer battery life while watching video as well as a substantially better picture. They also might be able to shave another mm off the size since the OLED wouldnt require a backlight.
