There are some recipes out there on the low-carb blogs for bread made without grain. Just saw one the other day that uses coconut flour. You'd either have to bake it yourself, though, or order it through the internet for lots more than bread should cost.

I roll my eyes when I read about the lengths people go to to simulate their favorite carbs. There are people who make "rice" out of cauliflower. The other day I saw a potato salad that substitutes cooked radishes for the potatoes. I was so curious that I cooked up some radishes. Had never even considered cooking a radish. FYI, they taste a lot like cauliflower. Anyway, I roll my eyes because there are a lot of yummy things you can eat on a low carb diet that were previously forbidden. Seems to me that the trick is to simply give up what you can't eat anymore, like potato salad and rice, and embrace that which you now can, like avocados, real sour cream, and pesto.

Sandwiches are a tough one, though. They're such a sensible way to get food into your mough. There are some low carb tortillas out there. They do contain wheat but not as much of it as the sandwiches you're used to. Cutting back is not as good as cutting out, but it's better than doing nothing.

Drink a very moderate amount before meal time...the French aren't always silly. ;-)

I'm not condoning that everyone start drinking, so please spare me what most of us adults already know about the hazards of too much alcohol.

But what about the drink with dinner? Does it ameliorate the bad effects of wheat?

I would really like an informed opinion or guess on the subject.
