My recipe doesn't call for anything else, unless you have a starter from someone else. Then you just add equal amounts of flour and lukewarm water. If you don't have a starter, it takes longer for the sponge to develop from airborne yeast.

For pancakes, you just add enough flour and water the night before for the pancakes you want. Stir it up real good and let it set in a bowl all night. In the morning you add a teaspoon of salt, four teaspoons of sugar, and two tablespoons of olive oil. Stir it up and make your pancakes.

Be sure to hold back some sponge to maintain your starter. It does not have anything in it but flour and water, so save it before you add the other ingredients.
