Never tried this one. Low Carb Pancakes:



Description: When you need an egg break

Ingredients:

Amount Cal Carbs Fats Sugars Protein

Whey -Optimum Nutrition vanilla 1/5 cup 180 5 2 2 36
Oat Bran 2 tbls 49 9 1 0 3
Chopped Walnuts 2 tbls 100 2 10 0 3
Egg 1 16 0 0 0 4
Coconut oil 1 teas 40 0 4 0 0
Water - to desired thickness
Cinnamon to taste
Almond butter for topping 1 tbls 85 3 8 1 4
Totals 470 18 24 3 49,


Prep: Combine ingredients and stir until desired texture. Cook over medium-low heat until brown. Top with almond butter. Makes about 3 pancakes. (Substitute ISO Pure 0 carb whey and Almond Flour for Oat Bran for less carbs.)

Has anyone tried "ThickenThin not/starch Thickener" as a healthy substitute for corn starch or flour? The ingredients are: Vegetable gums (acacia, guar, carob, xanthan). All of the customer reviews has given this product the highest rating. [Whole Foods]

Black Swan, if your wife has IBS then gluten, not just wheat, must definitely be considered a potential problem and should be removed from the diet to see the effects. For ex. the barley pancakes might be wheat free but they wouldn’t do her any good if a gluten sensitivity is causing her IBS. As Davis pointed out it is important to understand the difference between the two. Very basically it’s thought that some of us have the liver enzymes to break down and metabolize gluten and some of us don’t. If you don’t, the undigested protein molecules leak through the wall of the gut and enter the bloodstream where the immune system attacks them as though they were a foreign substance.

Someone with IBS would be well advised imo to avoid both wheat and gluten and then after a few weeks introduce them one by one so that she can check for any reaction. In the meantime for ex she could make pancakes from almond flour - these are gluten free, and low carb. Many many people feel a whole lot better when they give up gluten (and wheat). lowcarbdiets.about.com

Similarly, the Ezekial bread Lane and I both posted about is low GI and low gluten. Gluten lectins are found mainly in the seed coating and these are destroyed in the sprouting process. These breads are mostly well tolerated by those with gluten sensitivities, even moreso when toasted. In general though for weight loss specifically, as opposed to gluten sensitivity problems, beware of falling into the trap that Davis warns of that many low gluten items may still be high glycemic.
