I still buy a small chuck roast when I find it. I cook it in my pressure cooker. Sear the devil out of it first, then put it on the rack about 1/2 inch above the bottom. Pour in a couple cups of water/beef broth, add a large potato, a large red onion, a large hand full of small carrots and sometimes a tub of sliced mushrooms. Cinch the top down and cook for only about 20 minutes and let sit until I can open the lid. Delicious, tender and enough for about 2-1/2 meals. Best gravy, too.
