When I'm so inclined, I make what amounts to an egg pancake. I scramble a couple eggs in a bowl with about a tsp of olive oil, cheddar cheese, dried onion, chives, salt and pepper then just pour that into a medium hot skillet. I don't scramble them again in the skillet. At just the right time I flip the whole thing over and finish it. That comes out just like a pancake, in one flat piece. I like that with a couple of sausages for a tasty and filling breakfast.
