Oh, boy, I'll bet that is good! All except the hot peppers...My tummy just rebels at the thought...so I could make them without those...

Putting jalapenos in your cornbread. Now that is some fine eats. :) Some red or black beans to go with it and it's a grand meal. throw in a green salad and can be all healthy.

We make a dish called Pan de Elote... it's creamed corn, a cup of bisquick, an egg, some amt of milk, 2 tb of butter (calls for 2 tb sugar, but I leave that out). you mix that up. slice 8 oz of jack cheese and open a small can of green peppers (or jalapeno if you like it hotter) - then pour half the corn mixture in an 8x8, layer the peppers, then the cheese, then the rest of the corn mixture. bake at... uhm... 400 - might be 425. for 35 minutes. very tasty.
