Elroy, there is no way to avoid omega 6s - nor would you want to. inflammation is good in certain conditions.

the problem with the typical american diet is that our inflammatory response never turns off. this is silent inflammation. inflammation hurts, silent inflammation kills.

as i said in my last reply, omega 6 fatty acids aren't bad, too much of them is bad. since americans get too much, it is good to try and minimize the excess intake of omega 6s.

you can't avoid them. period. nor would you. but you can avoid extremely rich sources of AA and reduce or eliminate your level of silent inflammation.

the healthiest japanese have an AA/EPA ratio of 1.5.

americans have an AA/EPA average around 15.

the japanese are much healthier - until they move to the united states, start eating like americans and drive their AA/EPA ratio up to 15. then they get as sick as we do.

btw, the reason that everyone is jumping on omega 3s is that it reduces the AA/EPA ratio.

the other way to do it is to limit AA. it is also much cheaper to limit AA than to supplement with extra EPA.

again, the 83% reduction in diabetes occurred in an environment that was light in omega 6 fatty acids (including AA) and rich in EPA - leaving a lower AA/EPA ratio in the blood and less cellular inflammation.
