When you heat the iron skillet, it helps to let the pone slide out after cooking. I usually just spray it with Pam or wipe it with oil, so as not to the 'fat' content.

I'm not sure how it works... but lazy moi has not heated the skillet and the pone sticks... heat it, and it slips on out. I'm sure there is some science or whatever behind it but I just go with it.

also... it matters if you are using an iron skillet or something else. We always do cornbread in an iron skillet. I was right proud when niece #1 put an iron skillet on her 'must get list' when she was finishing college and moving into a place. She was raised in Los Angeles, but she knows some southern cooking. :)
