sourdough gets into that long complicated stuff. I avoid making breads that need to rise and all that. I've found good non-yeast bread recipes. my father enjoys that in his (now long) 'retirement'. He used to do sourdough but hasn't in a long time. But he does rolls & breads & ... those sweet breakfast things... roll up a fruit in dough and cook it? his from scratch rolls, though, are his fame. Ya know we gather here for reunions, decoration days (put flowers in the graveyard), weddings, deaths, whatevers. He about might as well not show up without rolls. He spends several hours on them... the mixing, then rising, then punching down, then rising again, then forming...

I must say there is nothing quite like them.

if you'd like the recipe he uses, I will post it. he has a favorite.

and the danishes... that's the word. you can do a few of those, then wrap all but the one you are eating, and freeze them and they do quite well.
