That sounds like a good project while a ballgame is on. And that's true about store bought - add the prices they want now for anything but air bread, and it's worth making it.

I had to look up what 'sponge' is. I got to a page that said this

"Sourdough "starter" is a batter of flour and water, filled with living yeast and bacteria. The yeast and bacteria form a stable symbiotic relationship, and (as long as you keep the starter fed) can live for centuries, a thriving colony of microorganisms"

after getting over that idea, being squeamish about such things, I read on.

this person seems to very much enjoy their sourdough making.

I think I'll give it a try, and use the lesser sugar. I've been hungry for a batch of french toast, but it needs, for me, a good sourdough bread.

The blend of the sour, with the sweet of powdered sugar and syrup over it makes the meal.
