Its difficult to know in the sense of proof beyond all reasonable doubt, but there isn't any serious evidence or good reason to think that the majority of, or even a significant number of the protests/protesters involved "astroturfing", and there is anecdotal evidence against the idea. Also unless people actually care about the idea, its hard to get them out to protest, and the effort would probably be relatively ineffective why at the same time leaving more tracks. And in less concrete terms it just doesn't feel like a bunch of paid off people. That last in particular is hardly evidence you could use in court (except indirectly by creating that same impression in the mind of the jury), but its strong enough for me that it would take a lot of real evidence to overcome, rather than the essentially zero evidence that I've seen.
