yes... cutting on bias is typically across the grain.. With the flank, I have found it to be the best way to ensure the most tender of cut.

I used the term extreme.. prbly not the best word now that I think about it.

I think of it as a compound cut. Tilt the knife to one side and cut meet across the grain at an angle.
