Crab club sandwich. I use the king crab and buy it in a 1lb container from Sams Club. I like the stronger flavor of the King. I'm sure this would also be quite good with the fake crab. It's a takeoff from a Lobster Club sandwich but I just think it's almost a sacrilege to do this with lobster. Some may feel the same way about King Crab:-)

This makes 2 sandwiches

Ingredients

8 oz of King Crab meat diced
1 T green onions, finely chopped
1 T freshly chopped parsley leaves
1 T celery finely diced
1/4 cup mayonnaise
2 t lemon juice
1/2 cup baby arugula
1 small tomato, thinly sliced
4 slices apple wood smoked bacon, cooked crisp (I like Nueskes)
4 slices medium thickness whole grain bread, lightly toasted

Directions

Toss together the crab, green onions, celery and parsley in a medium mixing bowl. In a small bowl, stir together the mayonnaise and lemon juice. Add half of the lemon mayonnaise mixture to the lobster. Season with salt and pepper and fold together.

Spread 1 side of each slice of bread with the remaining lemon mayonnaise mixture. Top 2 slices of bread with arugula, tomato and bacon. Spoon the lobster salad on top. Cover with a second slice of bread. Cut the sandwich in half, diagonally. Add some kettle chips and enjoy.
