high glycemic carbs are typically very inflammatory as they raise insulin and delta-5-desaturase. the one caveat applies to long distance cyclists - if your energy requirements are huge, you need the extra carbs to fuel the huge energy requirement. I think this principle would kick in after about 3 hours or so. GC H20 eats basmati rice instead of pasta because it is less inflammatory.
