I had a snack like this and just simplified it. Now it an easy quick very satisfying appetizer or snack. No idea what you'd call them, but here it is.

take 1/2 an english muffin and give it a light toast. spread with basil pesto, lay on a slice of tomato, if not a real juicy in season tomato give it a bit of sugar to wake the tomato up, and lay a piece of unprocessed mozzarella cheese on top, hit with a titch of salt and pepper and broil until melted.

Tamale pie - maybe I could get my wife to eat that one.... for some reason she doesn't like plain tamales.

And the question is: do we have that recipe?
