I saw one of those documentaries that showed this theory, including a pretty amusing Geraldo Rivera-type search for the remains of the vessel in the sand on the Oregon Coast.

Personally, I believe it is entirely possible that Chinese discovered the West Coast long before Columbus. Also, the Polynesians, and any other seafaring folks.

What did they do about it? What legacy did they leave?

Nothing.

Therefore, Columbus is the legitimate discoverer of America, with the Vikings a distant second because they left next to nothing also.

Interesting speculation. Not exactly a new hypothesis; Meggers and Evans published a paper along those lines more than 40 years ago (also dismissed by academics):
