Yep, I bookmarked it... Usually when I make bread, I add 1or 2 t. of sugar to the yeast mixture and let it really rise before adding it to the rest....but this doesn't have any sugar, and relies on the airspores evidently.

We've turned into a bunch of bread bakers. I make a couple of loaves of sourdough every week, ever since I got my starter.
