I have a bread maker but don't use it.

I do have a Bosch mixer that I use for kneading, but aside from that, I make my bread the old fashioned way.

Suggest you try it both ways, but I think you'll find that the hand made varieties are superior, especially with some of the artisan recipes I've been working with.
