The most common thing to do with eggplant is to fry it. Some fry it breaded and others not. Generally when you find it in a casserole it is fried sans breading first.

It is good in lasagne. My mother used to make it in a casserole with tomato, bread and lots of mozzarella. Frankly I haven't cooked in twenty years. I always did it by the seat of my pants.

Because it has a strong flavor of its own you do need to be generous with the spices or they will be overwhelmed.
