You can only trust your own palate. That's all that matters, anyway. I don't drink with your mouth, Parker's mouth, or the Gallo Hearty Burgundy drinker's mouth. There are as many palates as there are people. Each person seems to taste things differently than the next. A 'sophisticated' palate is the same as an 'unsophisticated'...they are the same because they are different. What Parker (or anyone else, for that matter) says is worthless, in my estimation. Those who believe differently are likely fooling themselves, much like those who think they hear something better when they listen to scratchy vinyl recordings compared to digital. Those groups of people who cling together claiming they hear the same thing or taste the same thing are in those groups because they don't taste the same things, they only read Parker and nod with each other in agreement. The agreement offers some reference point for that which is incapable of universal assessment and evaluation.

Of course, when I mentioned to a table full of guests the other night that the Finocchietti a cousin brought back from Naples last week had a front end on it reminiscient of a fern I mow in my pastures each year, the guy with the strangest palate in the group exclaimed I was absolutely right....and I was. :)

When it comes to cranberry sauces, however, there's really only one good one and it was posted here in front of the holiday. ;)
