That's it. It's my favorite cookbook.

What is unique about the book is they have lengthy (2-3 page) discussions on the methods they went through to come up with their recipes. Then they give you the "Best" method to cook whatever it is. I did my Thanksgiving turkey using their recipe. It calls for brining. Then cook with high temp initially (500) then immediately turning it down (I forget the temp). Start it out bottom side up. After 45 mins, rotate so one side is up. 30 mins later, rotate so other side is up. After 30 mins, put it breast side up and continue roasting. Absolutely perfect turkey.

I started my roast in a 400 degree oven, then turned it down to 250. Sounds like both of our roasts turned out well.
