You could eliminate taxes on healthy food, like fruits and vegetables. Work both ends.

Very true! But I suspect if the unhealthy foods become very expensive and the average joe can't afford them anymore, then those places that cater to the average joe will stock the shelves with food they can afford. If we make healthier foods cheaper, then you kill two birds with one stone.
