GRAPEVINE - Rainforest Cafe (Nasdaq: RAIN), the "eatertainment" destination that recreated a tropical rainforest in the midst of the new Grapevine Mills mall, requires 405 people to staff its new 21,000-square-foot restaurant and retail store.

That's more than one employee per customer at the 400-seat restaurant, says Steven Schussler, Rainforest creator and senior vice president of development.

But it's easy to see where the unbelievably high number of full- and part-timers comes from after a quick look at the employee roster.

Ever heard of a restaurant that needed an aquatic engineer to take care of the fish? He, of course, reports to a curator who is in charge of all of the rainforest animals. The animals, incidentally, are not part of the 405-employee list.

"We just require that many people to give the proper service and quality to our customers,"Schussler says. "We hope to see a minimum of 10,000 people a week."

But don't worry that there will be no room for paying customers at the elaborately decorated cafe, he added. Only 200 staffers are on hand at a time.

No word on the total staff budget, but Schussler did admit that managers make upwards of $100,000. That seems pretty high for a casual mall eatery. But with 405 headaches known as restaurant employees to keep track of, it may not be enough.

Yes, I remember. I posted some of that information and a lot of response to it on this thread and on the CAKE thread. I've had CAKE for awhile, but bought more when the DisneyQuest concept was mentioned. I still think RAIN has the better arrangement with locations at its new parks opening in Florida and California, though. Of course, if Disney started selling CAKE's deserts in all of its parks, then CAKE would rise even more =)
