I noticed that even though I am signed up for HTML5 most videos are still being served up in Flash. I'd say roughly 1 in 7 are being served in HTML5. I'm sure this varies depending on the videos selected.

As Gruber pointed out, it's not an HTML5 issue, it's a Quicktime issue.

And in any case, how often do you start up a video in one window, then go do something else in another?

All the time. In fact I'm watching a hockey game right now, as I type this.
