I image once a week, and critical data once a week, however if I do work on my blog more than usual, or Photoshop projects, I will back that up that same day. Worst case I loose a few days of data (usually not important data) and some emails, but since I leave my emails on the server for 7 days now, that is not a problem anymore.

sb, consider Mozy as an additional free, encrypted backup for your data. I use it.
