That definitely sounds authentic. I recall when I first entered Italy and was surprised to see people buying and eating chunks of Mozz cheese for lunch, sometimes with bread.

The Uno's recipe also uses some corn meal, about 1/4 cup if I recall, mixed with the regular unbleached white flour.
