I think cracker comes from the crack of a whip. Slave owners used whips on the slaves and were called crackers.

I'll bet if they knew where the word came from, they'd find another word.

It's the same with the Irish. Imagine being insulted if you're called a Mick, or Paddy, or Kermit, or Leprechaun.
