My favorite thing to do in when I lived in California was to walk through a peach orchard a couple of weeks after the cannery picking and pluck a sun ripened one... yummm, I never found a farmer who would object, they appreciate another peach connoisseur.

They pick peaches before completely ripe so they can survive the rough treatment before ending up in a can. The natural sugar is put on during the sun ripening stage, which is why they have to add sugar syrup in the canning process.

Anyone who has never been around produce ripened in the field or orchard has missed out on one of the few genuinely pleasurable experiences in this life

I know. I never much cared for pineapple or papaya until I went to HW for vacation. The difference in the taste of those fruits in HW vs the US is like nite and day.

And what we do to frozen orange juice is a sin. You wouldn't know you are drinking the same juice when drinking fresh vs frozen.
