>For India specialization in IT means all the bright kids are studying to become IT professionals rather than agriculture and food engineers.>

All the bright kids are studying to work in finance or management. IT has everyone from bright to dull. Agriculture has 70 percent of the population that has never done anything but agriculture for millenia. There are a lot of brains to spare..

Indians do not like processed food. They prefer that their mothers and wives prepare custom home made food to their taste and preferences. Most people (unless poor) will not eat morning's lunch left overs for dinner. Food has to be made fresh.

However, as more and more women work in urban cities plus the fascination with westernized junk food, there is the beginning of demand for processed food. But the bulk of the demand is still for branded packaged rice, lentils and wheat flour; which is not what you had in mind for packaged food.
