I'm sure someone will chime in but not me. I've had a VCR for close to 20 years and have yet to figure out how to record a program.

2. So I connected my regular DVD using 3 cables, a yellow for video and a white and red for sound. But....the picture comes through black and white when it should be in color. Any idea what might cause this? The same DVD player shows color on other TVs.

Is the B&W picture noisy or have background interference in it?

Dunno for sure. Just a couple WAGs.

Check the TV's menu for that input to see if it has an option to select composite (yellow video connector) or S-Video. S-Video uses 4 pin mini-din connectors with a "twinned" Siamese cable or a round cable.
Try an S-Video cable instead of the Yellow composite cable (you can keep the red and white leads for audio).
Better yet, If you have component outputs on your DVD player and an unused component input on the TV try that with proper (Y [green], R-Y [red] and B-Y [blue] *video* cables and R+W audio cables. If this is the case, you could test this connection using your present Y,R,W cable especially if the three conductors are the same size. Y=G, R=R, W=B. You won't have audio unless you add a separate stereo audio cable.

S-Video input connectors often have an internal switch to tell the TV to use the S-Video (B&W on one shielded cable and Color on the other) connection or the composite (B&W and Color signals added together). If there is no menu option the switch could be flaky.
