The later verses do not replace earlier verses but I agree with you that many Muslims see it that way too. The later verses were relevant to changes in circumstances as Muslims were force into defensive battles in order to survive, and are meant to apply to that circumstance alone. In modern times people interpret those verses for self serving purposes, muslims and non-muslims do that.
