If businesses are hiring and expanding why isn't this reflected in the jobs numbers?

Because so much of the expansion and hiring is happening offshore.

Where is McDonald's building new stores? Where are the increasing sales for Coach, Ralph Lauren, and Fossil coming from?

In the US, we could go on indefinitely with high unemployment and yet pretty robust business expansion, at least as measured by exchange traded public companies. The best hope for American workers right now is small business hiring created locally.

I think we are in a depression, or at the least that the recession hasn't ended

I don't know what to call what we're in. It's an odd mixture of deflationary and inflationary pressures. All I feel certain about is that unless higher tax revenues flow into the federal government from somewhere, the country's indebtedness will become unmanageable and hurt every sector of the country and every demographic and for a very long time.
