Having had two Dell Mini hacks in the family for about two years, I can tell you now that OS X upgrades were not always as simple as the usual click and done. They usually did require extra steps, documented and ready for download on the hackintosh threads, shortly after the final build of an OS X upgrade became available to the general public. All other application software upgrades operate as usual.

Prior to 10.6.0, upgrading was tedious. Since 10.6.0, both my and my gal's Dell Mini hacks upgrade with a click and done. Haven't had to upgrade the Mac Pro hack yet, came with the latest.
