Toward the end of the video, they had that one bureaucrat on the ropes and bleeding, but they lacked the resolve to finish him.
The former Minister for Development Kostis Hatzidakis was attacked by protesters outside a luxury hotel. He was escorted, bleeding from the scene as his attackers yelled "thieves" at him.

That's a good sign for the government to tighten the reins more.
Governments always do what they want.

I believe the riots will become worse, but those rioters aren't very organized and they aren't resisting in large enough numbers -- not based on the single video, but based on the lack of reports about increase rioting. It's still fairly sporadic.
True, if you look, you can find more stories about the riots but not on MSM.

The government is not going to back down, no matter what. The citizens will have to overthrow the government -- and then what?
True.

If they overthrew the gov't, they could implement plan Zimbabwe and see how that works.
