I thought it was interesting that the Atheists ridicule "creationists" by knocking the idea the earth is 6000 years old and some picture of Jesus riding a dinosaur yet the Pope refers to the Big Bang as a mechanism for Gods work.

There are "creationists", "young Earth creationists", and "theistic evolutionists", different groups (although the 2nd is a subset of the first). That last one is a term I just made up now (maybe its in wider use already but I didn't check), the other two are common.

The 6000 year old Earth group, is the "young Earth creationists".

My understanding of the Catholic Church's position is simply that God was behind the creation of the universe, and the existence of man, however it actually happened. The Catholic Church is not creationist, let alone young Earth creationist.

"Maybe that's the way God did it" about evolution would seem to me to be theistic evolution, not creationism. Well actually since its "maybe" I suppose it would be agnostic between God driven evolution and creationism.
